Carrot Cupcakes with White Chocolate Frosting

The delicately spiced carrot cake pairs beautifully with sweet, white chocolate frosting. These cupcakes are perfect for a tea party or as a little treat during afternoon tea when you need to recharge your batteries. The ones in the picture are mini cupcakes, but in the method, I’ve put timings for both mini and standard sized.

The white chocolate I used had vanilla in it, and I love those little flecks you can see. The addition of the warm vanilla really turned it up a notch. I’d highly recommend finding some vanilla chocolate, or you could always add half a teaspoon of vanilla paste.

RECIPE: CARROT CUPCAKES WITH WHITE CHOCOLATE FROSTING
MAKES: 12 standard cupcakes or 25 mini cupcakes

INGREDIENTS:

For the cupcakes:

  • 150g FLOUR
  • 1 tsp. BAKING POWDER
  • ½ tsp. BAKING SODA
  • ½ tsp. SALT
  • 1 tsp. GROUND CINNAMON
  • 1 tsp. GROUND GINGER
  • ½ tsp. GROUND CARDAMOM
  • ½ tsp. GROUND NUTMEG
  • ¼ tsp. GROUND CLOVES
  • 180g BROWN SUGAR
  • 110g VEGETABLE OIL
  • 2 EGGS
  • 75g PLAIN YOGHURT
  • 1 tsp. VANILLA EXTRACT
  • 150g CARROTS, grated

For the frosting:

  • 100g WHITE CHOCOLATE (with vanilla, if you can find it), melted
  • 140g BUTTER, softened
  • 150g POWDERED SUGAR
  • Pinch SALT

METHOD:

  1. Preheat the oven to 180c. In a large mixing bowl, add the dry ingredients (FLOUR, BAKING POWDER, BAKING SODA, SALT, GROUND CINNAMON, GROUND GINGER, GROUND CARDAMOM, GROUND NUTMEG, GROUND CLOVES). Mix, so that the spices are evenly distributed.
  2. In a separate bowl, whisk the BROWN SUGAR, VEGETABLE OIL, EGGS, PLAIN YOGHURT and VANILLA EXTRACT. Then, stir in the GRATED CARROTS.
  3. Pour the wet ingredients into the dry ingredients and stir to combine.
  4. Spoon the batter into cupcake liners, filling to 2/3 high. Bake for 20 minutes for standard-sized cupcakes or 11 minutes for mini cupcakes. Check with a toothpick – if it comes out clean, the cupcakes are done. If not, bake for another minute or two. Leave to cool while you make the frosting.
  5. For the frosting: Beat the BUTTER until creamy, add the POWDERED SUGAR – a third at a time, and then whisk in the MELTED CHOCOLATE and SALT. Spoon into a piping bag and pipe on to cooled cupcakes.
